
Cauliflower rice is a great healthy twist to traditional rice. All you need is a grater or food processor to knock up rice-like pieces and you’re set for a low carb, high fibre meal! Cauliflower is also a great source of Vitamin C, K and B6, and tastes amazing with a spicy seasoning.
How to make:
- Wash and dry cauliflower. Cut into 3-4 smaller pieces, and grate into rice sized pieces (or use a food processor). Use a paper towel to remove any excess liquid.
- Heat a saucepan over medium-high heat with 1 tbsp oil. Once hot, cook the corn, parsley, chopped red onion, tomatoes and sliced zucchini with Sofia for 5 minutes.
- Add in the cauliflower rice, some extra Sofia, and saute for another 6-8 minutes.
- To finish, squeeze over some lemon
