Recipe of The Week: Roasted Leek & Cauliflower Soup

Carbohydrates: 5.25g, Protein: 0

Ingredients:

320g leek, sliced
200g cauliflower broken into small florets
600ml water
1 vegetable stock cube
60g cream
Pinch lite salt and ground black pepper

Vietnamese mint
Optional spice – garam masala, adds smokey flavour

Method

  1. Pre-heat oven 180c
  2. Spray leeks and cauliflower with cooking oil, place in roasting dish in oven for approximately 15 minutes or until slightly brown.
  3. Place in saucepan, cold water, stock cube and vegetables. When soup is boiling turn down and simmer for 10 minutes.
  4. Blend vegetables and remaining liquid until smooth, stir in cream and heat through, do not boil.
  5. Garnish with Vietnamese mint.

Maya's Blog-Week 3, More Than Weight Loss

This week’s weigh-in didn’t quite show the same results as last week. I weighed in at 73kg last week, and when I stepped on the scales 7 days later I was 73.4kg. Originally I was really disappointed with myself, and accredited this gain onto my pasta bake cheat meal. However, after looking at the composition of my weight with Sheridan, it actually turned out that my fat had dropped 1.3kg, but my water levels and muscle mass had increased which outweighed the fat loss. My muscle increased by 1.6kg from the week before, not only because I’d been synthesising muscle from working out, but also because my muscles were more hydrated. My metabolic age also decreased from 31 to 27-years-old, and I lost 3cm in the week as well. So, after initially being disappointed with my overall body weight, I left FTF with a super positive mindset!

Maya's Blog-Week 2, The First Weigh In

Wow - down 2.5kg! I can’t deny that I was super nervous before stepping on the scales. I could feel that I’d lost weight, but I was unsure if I was on track to hitting my goal weight. But, after my appointment I was really happy with my results and it was an awesome motivator for me. Sheridan adjusted my protein intake as my ketone levels were showing really high, and I swapped a few of my sachets for the chocolate flavour.

 

After having a lot of trouble getting down at least 1 sachet a day (supposed to aim for 3/day) for the first week, I had no trouble at all getting all 3 in with the chocolate flavour! They’re a really nice treat after dinner as a hot chocolate, or perfect for a mocha during the day - you could also use the vanilla flavour in coffee as an alternative. My favourite recipe this week has been the Baked Eggs and Bacon! On Sunday night I made chopped up 6x the amount of veggies in the recipe, and split this mixture amongst the 12 cups in a muffin tray, and then added one egg and the cheese to each one. After baking, I wrapped them in pairs and froze them, to be reheated throughout the week. Each pair was equivalent to one serve, and they were so good that my mum even pinched a couple!

Maya's Blog: Week 1, Beginning the Ultra Lite Experience

The Ultra Lite weight loss program is a ketogenic diet program that tracks your proteins and carbs and re-educates the brain to provide rapid and sustained weight loss results.

Last week I met with Megan and Sheridan at First Things First to talk with them about what the Ultra Lite program can do for me. I wanted to try a meal plan based program because I had recently done an 8-week exercise challenge and not seen the results I had hoped for.

At my consultation, I weighed in at 75.5kg, and am hoping to reach 68kg by the completion of the 5-week plan. As a newbie to any sort of meal plan or diet, I’m keen to see the results that I might be able to have from the Ultra Lite program. I wanted to continue on the path of a lifestyle program versus a strict diet.
